It pairs amazingly well with my umami orange steak.
Coriander is the other, dare I say, prettier name for cilantro. You'll see the leaves featured in my logo. But because cilantro is the more widely used term for this herb let's stick with that here.
How to make cilantro lime rice:
You can prep for this dish while the rice is cooking to save time. Bring the water to a boil in a medium saucepan, then stir in the jasmine rice and butter. Cover the saucepan, then turn the heat down to low and simmer for 20 minutes.
Prep for this dish is really simple - mince the garlic and onion, juice and zest a lime, and chop the cilantro. Heat the oil in a skillet over medium heat. Cook the onion and garlic together with salt and pepper for a few minutes until the onion softens and begins to turn translucent. Remove it from the heat and set it aside until the rice is ready.
Once the rice has finished cooking, fluff it with a fork and move it into a mixing bowl. Add in the onion, lime juice, lime zest, and cilantro. Mix it up until it's well combined. Serve it garnished with cilantro leaves for a pretty touch. And there you have it! It's so easy from start to finish.

Ingredients
2 cups (473 ml) water
1 cup (185 g) jasmine rice, uncooked
1 tablespoon (14.2 g) salted butter
1 tablespoon olive oil
1 small yellow onion, minced
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon pepper
2 tablespoons lime juice
1 teaspoon lime zest
¼ cup (4 g) cilantro, chopped
Instructions
Bring water to a boil in a medium saucepan. Stir in rice and butter. Cover and reduce heat to low, then let simmer for 20 minutes.
While the rice is simmering, heat oil in a skillet over medium heat. Add in onion, garlic, salt, and pepper. Cook for a few minutes until onion softens and begins to turn translucent, stirring occasionally. Remove from heat and set aside.
When the rice is ready, move it into a mixing bowl. Add in the onions, lime juice, lime zest, and cilantro. Mix until well combined. Serve garnished with cilantro leaves.
