Cilantro Lime Rice

Description

Fragrant jasmine rice infused with the flavours of fresh cilantro, lime, garlic, and onion. This zesty, flavourful rice dish is so quick and easy to prepare that you can have it on the table in 25 minutes. It is the perfect side for tacos and many other things.


Ingredients

2 cups (473 ml) water

1 cup (185 g) jasmine rice, uncooked

1 tablespoon (14.2 g) salted butter

1 tablespoon olive oil

1 small yellow onion, minced

2 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons lime juice

1 teaspoon lime zest

1/4 cup (4 g) cilantro, chopped


Instructions

Bring water to a boil in a medium saucepan. Stir in rice and butter. Cover and reduce heat to low, then let simmer for 20 minutes.

While the rice is simmering, heat oil in a skillet over medium heat. Add in onion, garlic, salt, and pepper. Cook for a few minutes until onion softens and begins to turn translucent, stirring occasionally. Remove from heat and set aside. 

When the rice is ready, move it into a mixing bowl. Add in the onions, lime juice, lime zest, and cilantro. Mix until well combined. Serve garnished with cilantro leaves.
