This cucumber lemonade is zen in a glass, with freshly squeezed lemon, refreshing cucumber, and sweet honeydew melon. And since it's sugar-free, you can drink it guilt-free.
I find that the usual downside of lemonade is the huge amount of refined sugar it's packed with. But lemonade shouldn't have any downsides, which is why I completely eliminated sugar from this one. Instead, I used liquid stevia. Stevia is a plant extract with zero calories that is said to be 200-300 times sweeter than refined sugar of the same volume. Meaning? You only need a little bit!

Also.. I actually made lemonade. Not just any lemonade either. This lemonade is so refreshing and so zen that if I close my eyes I feel like I'm at an exotic spa somewhere. And that, my friend, is exactly what I need right now.
how to make cucumber lemonade
I made this cucumber lemonade with two cups lemon juice, two cups cucumber juice, two cups cold water, a bit of liquid stevia, and honeydew melon ball ice cubes.
Lemons vary in size and juiciness, so you will probably need between eight and eleven large lemons. I ended up using eight large lemons and two large english cucumbers.
Start by squeezing lemons until you have two cups of juice, then set it aside for now.
Peel and chop your cucumbers.
Strain the cucumber purée through a sieve into the pitcher.
You can use a small spoon to swirl the cucumber purée around, allowing more juice to go through. Discard any solids. You want two cups of cucumber juice.
Strain the lemon juice through the sieve into the pitcher to remove any seeds, then stir in the cold water. Now add in the stevia a bit at a time, swirl it around, and taste test. I used one and a half teaspoons of liquid stevia. You may need more or less depending on how sweet you like your lemonade. Remember - a little bit of stevia goes a long way.
I made some honeydew melon ball ice cubes ahead of time. They're fantastic because they add just a subtle hint of melon flavour. 8-11 large lemons, to make 2 cups freshly squeezed lemon juice (2c =473 ml)
2 large English cucumbers, to make 2 cups fresh cucumber juice (2c =473 ml)
2カップ (473 ml) cold water
1 ½ 小さじ liquid stevia (more or less to taste)
honeydew melon ball ice cubes
Optional: Ahead of time, prepare honeydew melon ball ice cubes.
Squeeze lemons to get 2 cups of juice.
Strain the lemon juice into the pitcher to remove any seeds. Then stir in 2 cups of water.
Add the stevia, a little at a time, taste testing between additions until desired sweetness is achieved.
Serve with melon ball ice cubes if desired, or on ice.
