This fresh, whipped strawberry butter is fluffy, creamy, and full of real, deliciously sweet strawberry flavour. This pretty berry butter makes a wonderful addition to breakfast, baked goods, and desserts. It's so versatile and easy to make with only five simple ingredients.
What is different about this homemade recipe and other strawberry butters that I have seen, is that I first cook the strawberries down with sugar. This brings out a much richer strawberry flavour.

- イチゴ - You can use frozen, but fresh, ripe berries will give you the best flavour.
- 無塩バター - Use a high quality butter for the most delicious results. Make sure the butter is at room temperature before you get started.

- 塩 - I used a beautiful fleur de sel, but you can use any fine grained salt.

作り方
Start by removing the stems from your strawberries and chopping them up.
Add the chopped strawberries and 1 tablespoon of sugar into a medium saucepan. Heat it over medium heat and allow it to cook for about 10 minutes, stirring often. Remove the pan from the heat and set it aside to cool to room temperature.
Once the strawberries have cooled, strain them through a sieve into a bowl. I used a spoon to press the pulp to extract as much of the juice as possible. Set the bowl aside and discard the pulp.
Using a hand mixer or スタンドミキサー with a paddle attachment, whip the room temperature, unsalted butter until it's light and fluffy - about 4 minutes or so.
Add in the strained strawberry juice, salt, pepper, and 2 teaspoons of sugar. Mix until everything is fully incorporated.
Give the butter a taste test. I like it this way - a bit sweet but not overpowering. If you would like it to be sweeter, add in some more sugar to taste and mix well.
Your whipped strawberry butter is ready to enjoy. Serve it at room temperature.

無塩バター - You can use salted butter. However, salted butters vary in how much salt is added to them. If you are using salted butter, do not add any salt until the very end after you taste test and see if you need to.
グラニュー糖 - You could substitute with confectioner's sugar or honey.

You can modify this recipe to make many different kinds of berry or fruit butters. Blueberry, blackberry, raspberry, peach, apricot, to just name a few. You will need to adjust the amount of sugar you add depending on the tartness of the berry or fruit that you use.

You can store this strawberry butter in an airtight container in the refrigerator for up to 5-7 days. Set it out on the countertop for about 15 minutes before serving to allow it to soften and become more spreadable.
Tip: You can form the butter into a log shape and slice off what you need as you use it.
You can also freeze it for up to a 2 months and thaw it by keeping it in the refrigerator overnight. However, fresh fruit butters do look and taste better than frozen and thawed ones, so I recommend making a fresh batch. You can always halve the recipe if you don't think you will use all of it.
