Ingredients
- Cantaloupe melon
- Honeydew melon
- Prosciutto
- Buffalo mozzarella, pearl-size
- Fresh basil leaves
- Fresh chives
- Freshly ground black pepper
- White balsamic vinegar

Instructions
You are going to want a ripe and juicy cantaloupe and honeydew melon for this dish. You can check ripeness by scent. Sniff the blossom end of the melon (opposite from the stem) and you should be able to smell a sweet scent if the melon is ripe. Choose a dull, yellowish honeydew, rather than a shiny, green one.
Cut both melons into ½ inch slices.
Then, using mini cookie cutters, cut the melon slices into flower shapes. The melon scraps make a great snack.
Roll the slices of prosciutto into tight rolls, and then cut each of them into thirds. This gives them a rose bud appearance.
Arrange the melon 'flowers' onto a large serving plate. Then top them with the prosciutto 'buds', pearl-sized mozzarella balls, basil leaves, and chopped chives.
Finish off the melon prosciutto salad by giving it a healthy sprinkling of freshly ground pepper and a drizzle of white balsamic vinegar. Alternatively, you could use regular balsamic vinegar. I chose to use white balsamic so as to not take away from the pretty colours of the dish. It adds a beautiful depth and sweetness to the flavours.
Substitutions
You can substitute the buffalo mozzarella for any kind of mozzarella ball. I find that pearl-sized looks the prettiest in this dish, so try to find it if you can.

You will need mini cookie cutters with flower shapes to cut up the melons.
Storage
Cut melon can be stored in an airtight container in the fridge for up to three days. However, once this salad is assembled, it is best enjoyed the day of.
Tip
You could partially prepare this dish ahead of time by having the melon 'flowers' cut out and the prosciutto rolled and cut. Then it will just take a couple minutes to arrange and season shortly before you are ready to enjoy it. You can ensure that you will have it at its freshest this way.
