Every spring I have a tradition of baking my carrot cake cupcakes. These cupcakes are made with the most delicious and moist carrot cake, lusciously slathered in my matcha vanilla bean cream cheese frosting, and topped with a chocolate-dipped strawberry made to look just like a little carrot.
