Thai pink milk (นมเย็น / nom yen) is a sweet and uber-refreshing drink that is commonly found being sold by vendors in the bustling street markets of Thailand. It has a delicious flavour similar to sweet and creamy, tangy strawberry. Served on crushed ice, this beverage is a wonderful pick-me-up for a hot summer day. And it's so easy to make; with just three ingredients plus ice!
The Thai name, nom yen (นมเย็น) translates to 'frozen milk.' This is used interchangeably with its newer name, nom chompoo (นมชมพู) or 'pink milk.'
If you're a fan of fruity-flavoured milk drinks, I recommend that you also try Korean banana milk and Korean strawberry milk. These tasty recipes are not to be missed!
Ingredients
- Hale's Blue Boy sala-flavoured syrup - this product of Thailand is a syrup with flavour inspired by the South East Asian palm fruit (salacca), a native plant of Thailand. It is bright red in colour and the flavour is sweet, tangy, and similar to strawberry.
- Condensed milk
- Crushed ice
- Milk

I like to start by chilling my glass in the freezer for five minutes. This helps to keep the shaved ice frozen longer and the drink extra refreshing.
Next, in a small dish mix together the sala syrup with the condensed milk.
Fill your chilled glass with crushed ice.
Pour the sala syrup / condensed milk mixture onto the crushed ice.
Add in the milk, then stir to mix everything together. Top with more crushed ice.
Substitutions
If you would like to make a vegan-version of Thai pink milk, use the following substitutions:
- Milk - substitute with unsweetened coconut milk (from a carton, not a can)
- Condensed milk - substitute with a vegan condensed milk
Hale's Blue Boy sala-flavoured syrup is vegan, vegetarian, and gluten-free!
Equipment
I used this shaved ice machine that I bought on Amazon. It worked so well to get the perfect flaky, shaved ice consistency that I was looking for.
Storage
Since this drink only takes a minute to make and uses crushed ice, I recommend making it fresh when you're ready to drink it rather than making it ahead and storing it.
However, if you have extra that you really want to enjoy later, remove any ice before storing it in an airtight container in the refrigerator. The ingredients will settle and separate as it sits, so give them a stir to blend then pour over fresh crushed ice.
Top tip
Just looking at the colour, I can't help but think that it would be the perfect drink to serve at a pink-themed baby shower or birthday party. How cute would that be? Or how about a Valentine's Day party?
This recipe multiplies very well, so it's great for making a large batch.
